Apple and Cinnamon Bread Pudding Recipe
2 Tbsps of butter; melted
2 pcs of apples; core removed, skinned, & sliced
3/4 c of sugar (brown); divided
1.5 tsps of cinnamon; divided
2 pcs of eggs (large)
12 oz canned milk (evaporated)
3/4 c of apple juice
2.5 c of French bread; sliced into 1/2-inch pieces
Spread the butter evenly in a casserole or baking dish (2 quarts, must fit inside the crockpot). Sprinkle it with 1/2 tsp of cinnamon, as well as 2 Tbsps of sugar. Add in the apples. Set aside.
Meanwhile, combine the eggs, apple juice, and evaporated milk in a medium-sized bowl. Whisk ’til well-blended. Whisk in remaining cinnamon followed by what is left of the sugar. Mix well. Add the sliced French bread. Mix well.
Position a rack on the bottom of the crockpot. Position casserole dish on top of the rack. Pour water underneath the rack. Cover with lid. Set heat to high. Cook for approximately 2.5 hours. Best served warm.
