Apple and Cranberry Filled Turkey Rolls Recipe
2 tsps of butter (or margarine); melted
1/2 c of chicken broth
1 apple (large); core removed & diced
1/2 c of onion; diced
1 rib of celery; diced
1 c of cranberry sauce (whole berry)
3/4 tsp of poultry seasoning
2 c of seasoned crumb-style stuffing
2 – 3 lbs of turkey breast cutlets; rinsed & drained
Mix the melted butter, chopped apples, chicken broth, chopped onions, cranberry sauce, chopped celery, crumb-style stuffing and poultry seasoning together in a medium-sized bowl. Mix well. Set aside.
Meanwhile, combine salt, pepper, and garlic powder in a small bowl. Toss in the cutlets. Mix well to coat evenly.
Spoon about 3 Tbsps of this filling onto each cutlet; and then roll it up. Seal with toothpick. Place the cutlets in the crockpot. Cover with lid. Set heat to low. Cook for 8 hours.
To serve, take out the turkey rolls and transfer to a platter. Cut crosswise into 1/2-inch slices. Pour any drippings over the turkey. Garnish with a sprig of parsley on top. Serve with fried rice.
