Broccoli, Macaroni and Cheese Recipe

1 pkg of broccoli (10 oz); chopped
1 Tbsp of flour
2 Tbsps of butter
2 c of American cheese; shredded
Salt
5.5 c of milk
2 c of noodles; cooked
3 Tbsps of onions; chopped

Toss the cooked bowtie pasta and chopped broccoli into the crockpot. In a small bowl, whisk together onions, butter, flour, milk, American cheese, and salt ’til smooth.

Pour it over the macaroni and broccoli. Stir the mixture well. Cover with lid. Set crockpot control to low. Cook for 3-4 hours.

Black Beans and Corn Recipe


Black Beans and Corn Recipe

2 canned black beans (15 oz); strained & washed
2 canned green chilies (4 1/2 oz); chopped
1 canned tomatoes (Mexican Stewed, 14 1/2 oz); not drained
1 canned tomatoes (14 1/2 oz); diced & not strained
1 canned whole kernel corn (11 oz); strained
4 pcs of scallions; sliced
2-3 Tbsps of chili powder
1/2 tsps of garlic; minced & dried

Combine black beans, green chilies, Mexican stewed tomatoes, regular diced tomatoes, kernel corn, onions, chili powder, and garlic in a crockpot (about 4 quarts). Mix well.

Cover with lid. Set heat to low. Cook ’til beans are according to your desired tenderness (about 4-5 hours). Stir in sour cream. Return the lid.

Cook for another half hour, stirring occasionally. Use as topping for tortilla chips and sprinkle with grated Cheddar prior to serving.

Crockpot Split Pea Soup Recipe

1 (16-oz.) package of rinsed dried split peas
2 c. of ham, diced OR
2 pcs. meaty ham hocks OR
1 pc. hambone
1 medium chopped onion
2 pcs. chopped celery stalks
1 pc. bay leaf
1-2 garlic cloves, minced
1/4 cup chopped parsley (fresh)
A tbsp. of salt (seasoned)
1.5 qts. of warm water
Half a teaspoon of freshly ground pepper

Place all the ingredients inside your Crockpot in layers then add in the water. Don’t stir. Cook, covered, at high settings for 4-5 hrs. or if cooking at low settings then 8-10 hrs. just until the peas become soft & the ham starts to fall off from the bone.

Take out the bones & bay leaf. This dish is best served with some croutons as garnishing. The dish can also be stored inside your freezer.

Eggplant Parmigiana Recipe

4 pcs. big eggplants
2 pcs. eggs
1/3 c. water
3 tbsps. flour
1/3 c. bread-crumbs (seasoned)
1/2 c. cheese (Parmesan)
1 (2-lb.) can of sauce (Marinara)
1 lb. mozzarella, sliced
Olive oil (extra virgin)

Cut eggplants into 1/2-inch pcs and place them inside a bowl layered then sprinkle the layers with some salt & allow it to stand for 30 mins. Drain off moisture by patting them dry with paper towls.

In another bowl, blend together flour and water. Coat eggplant pcs. with your flour and water mixture then let it excess batter slide off.

Heat some oil in your skillet then fry up the eggplants. In another bowl, mix together Parmesan and crumbs. Onto a liner (removable) layer 1/4 of eggplants, top them with 1/4 of crumbs, 1/4 of marinara & 1/4 of mozzarella.

Do the same layering 3 times in order to produce around 4 layers of eggplants, crumbs, marinara & mozzarella.

Put the liner onto the base of your crockpot then cook it covered at low settings for 4 to 5 hrs. or if you are on auto mode, then cook time is 3 hrs.

Mexican Chicken Stew Recipe


Mexican Chicken Stew Recipe

2 lbs of breasts of chicken fillet (skinless); chopped into 1.5-inch pieces
4 pcs of russet potatoes (medium); skinned & minced
1 canned green chilies (4 oz); sliced into small cubes
1 pkg of taco seasoning mix (1.25 oz)
1 canned tomato sauce (8 oz)
1 canned mild salsa (15 oz)

Combine all the ingredients in the crockpot. Mix well. Cover with lid. Set heat to low. Cook for 6-8 hours. May be served with freshly-warmed tortillas

Crockpot Lasagna Recipe

2 Tbsps of butter
Garlic powder (optional)
1/2 lb of sausage
1/2 lb of ground beef
2 c of Parmesan cheese; divided
1/2 c of Italian breadcrumbs
1 bag of Mozzarella cheese
16 oz. of Ricotta
2 pcs of eggs
A dash of salt and pepper
1.5 tsps of parsley flakes
1 box of rotini (or ziti)
2 jars of pasta sauce (28 oz)
1 pc of egg
2 Tbsps of olive oil

Cook pasta as stated in the package instructions ’til al dente. Drain and set aside in a large bowl. Toss the pasta in olive oil.

Heat a medium-sized nonstick skillet with butter over medium heat. When the butter melts, saute the garlic and onions for about one minute. Toss in the beef. Saute ’til light brown.

Remove from heat. Drain. Toss it with pasta together with pasta sauce, 1 cup of Parmesan cheese, crumbs, 1 egg, half of the Mozzarella.

Grease the crockpot with butter. Pour the 1/2 of the meat and pasta mixture into the crockpot. Spread evenly. Set aside.

Meanwhile, combine the 2 remaining eggs with the other cup of Parmesan cheese, ricotta, parsley, pepper and salt. Beat altogether ’til mix well. Pour 1/2 of this over the first pasta layer.

Add the remaining meat and pasta mixture on top of the first ricotta layer. Spread the remaining ricotta evenly on top of the second pasta layer. Cover crockpot with lid. Set heat to low. Cook for 4-6 hours. Serve with crusty bread.

Taco Chili Recipe


Taco Chili Recipe

1.5-2 lbs. beef (ground lean)
1 med. chopped onion
1 (1 1/4-oz.) package of seasoning mix (taco)
1 (15-oz) can of beans (chili) in sauce
2 (14.5-oz.) cans of tomatoes (diced)
1 (16-oz.) can of rinsed & drained beans (pinto)
1 c. of corn (whole kernel), frozen
1 (10-oz.) can of tomatoes (diced) w/green chilies
Cheese, shredded (cheddar, mozzarella or monterey jack)
tortilla chips ( crushed)

Onto a skillet, saute onions and beef until they are browned & onions become tenderized. Split it into 2 batches for easier cooking. Excess fat should be drained. Put the cooked meats & onions into your 3.5-5-qt. Crockpot.

Next, add in taco-seasoning, tomatoes, tomatoes w/green chilies, beans (pinto), beans in sauce, & whole kernel corn. Cook covered at low settings for about 8-10 hrs. or if cooking at high then cook time is only 4-5 hrs. Finish with a sprinkling of cheese & tortilla chips.

Creamy Chicken and Biscuit Dumplings Recipe

Salt
1 Tbsp of veggie oil
1 pc of onion; minced
1 Tbsp of parsley; minced
1/2 tsp of allspice; ground
1 c of white wine (dry)
1 canned refrigerated biscuits; quartered
2 Tbsps of flour
1/2 c of heavy cream
1 tsp of ground black pepper
2 cloves of garlic; minced
2 pcs of carrots; skinned & chopped
2 c of broth of chicken
2 ribs of celery
3 lb of your choice chicken cuts; chopped
4 Tbsps of butter

Place a large nonstick skillet with oil and butter over medium heat. When the butter melts and the oil is hot, saute the garlic and onions for about 2 minutes. Add the chicken, saute ’til light brown. Remove from heat and transfer all to a crockpot (6 quarts).

Stir in the chicken broth, celery, parsley, carrots, ground black pepper, allspice, white wine and a dash of salt, to taste. Mix well.

Cover with lid. Set heat to low. Cook for 5-7 hours, stirring occasionally. Remove the chicken and transfer to a platter to detach meat from bones. Discard chicken bones.

Combine the flour with cream in a small bowl. Mix well ’til smooth. Stir it well into the broth. Turn heat to high. Toss the biscuits into the crockpot.

Cover and cook for half an hour (’til biscuits are firm). Reduce the heat to low. Return the chicken to the crockpot. Cover and continue cooking for another half hour.

1 can roasted garlic chicken broth (about 2 cups)

Pepper and salt

Combine barley, garlic chicken broth, mushrooms, pepper and butter in the crockpot. Mix well. Cover with lid. Turn the crockpot control to low. Cook for 4-4.5 hours.

Choco-Peanut Butter Crockpot Cake Recipe

1 Tbsp of butter, for greasing
1/3 cup of peanut butter (creamy)
1/2 cup of nuts; chopped
1/2 cup of water
2 cup of chocolate cake mix

Combine the chocolate cake mix, water, creamy peanut butter, and chopped nuts in a large bowl. Whisk well ’til smooth and creamy.

Grease a souffle mould (3 quarts, must fit in the crockpot) with butter. Dust with flour. Transfer the cake batter to the mould. Cover with 4 paper towel sheets.

Cover with lid, leaving a 1/4-inch opening to allow steam to escape. Set heat to high. Cook for 2-3 hours.

Turn off the heat. Let it stand in the crockpot ’til mold is cool enough to handle. Remove from the crockpot. Remove from the mould.

1/4 cup of sugar (brown)
1/2 tsp of pepper
3/4 lb of bacon; crumbled & fried
1 cup of catsup

Meatball Ingredients:
1 tbsp veggie oil – for frying
1 c of bread crumbs
1 tsp of garlic powder
2 lbs of ground beef
2 pkgs of onion soup mix
2 pcs of eggs
2 tsps of Worcestershire sauce

Sauce Ingredients:
1/4 c of “red wine” vinegar
1/4 c of Worcestershire sauce
1/2 c of sugar (brown)
1/2 c of sweet pickle relish
1/2 c of beef in broth
2 canned tomato paste (12 oz)
2 garlic cloves; minced
2 pcs of onions; sliced
2 tsps of mustard (dry)
2 tsps of salt

In a medium-sized bowl, combine the beef, bread crumbs, garlic powder, onion soup mix, 2 tsps Worcestershire sauce, and eggs. Mix well using fork or your hand. Mold into walnut-sized balls. Set aside.

Place a medium-sized nonstick skillet with veggie oil over medium heat. When the oil is hot, roll the meatballs over ’til golden. Remove from heat and transfer to a platter with paper towel to drain excess oil.

Combine onions, tomato paste, and garlic, 1/4 cup of Worcestershire sauce, red wine vinegar, brown sugar, pickle relish, beef broth, salt, and mustard in a medium-sized bowl. Whisk well.

Pour the mixture into the crockpot, followed by the meatballs. Stir it well. Cover the crockpot with the lid. Cook for 5-6 hours. Serve hot with party flags (toothpicks).

16 ozs. pecan halves
1/4 tsp. all-spice (ground)
1/2 c. of melted butter
1/4 tsp. of ginger (ground)
1/2 c. of confectioner’s sugar
1.5 tsps. cinnamon (ground)

Inside your 3.5-qt. Crockpot, mix together butter & pecans until everything is blended well. Add in confectioner’s sugar and stir to coat everything. Cook covered at high settings for around 15 mins.

Then, lower settings to about low then take off the cover then continue to cook for 2 hrs. or just until nuts become coated with glaze. Nuts should be transferred to your mixing bowl.

In another bowl, mix together spices then evenly spread it over your glazed nuts. Cool completely prior to serving

5 med. potatoes (sweet)
3 pcs. peeled and cored baking apples, slice into wedges
2 tbsps. melted butter
1/4 tsp. of nutmeg (ground)
1/4 c. of syrup (maple flavor)
1/4 c. of pecan pcs
1/4 tsp. of cinnamon (ground)

Lightly grease your Crockpot with margarine/butter. Next, peel the potatoes then slice them up in 1/2-inch pcs. and put them onto bottom part of your Crockpot.

Then, top it with the apple slices and add in butter, maple syrup, nutmeg & slices of apples. Cook covered at low settings for 4 hrs. or just until the potatoes become soft. Finish with a sprinkling of pecan nuts 30 mins. prior to turning off the heat.

2 lbs. hotdogs/cocktail franks sliced in bite size pcs.
1 c. of sauce (chili)
2 (27-oz.) cans of chunks of pineapple
1 c. of jelly (currant)
1 tbsp. of mustard (prepared)
3 tbsps. of juice from a lemon

Mix together chili sauce, currant, lemon juice and mustard inside your Crockpot. Make sure to blend everything well and break up any chunks of jelly.Cook covered at high settings for 15-20 mins. for the sauce to blend and jelly softens up.

Add in sliced cocktails franks/hotdogs then add in pineapple. Continue cooking at high settings for about 2 hrs. and if cooking at low settings then cook time is 4 hrs. Serve directly from the pot with the settings turned to low.

Banana Walnut Bread Recipe

1/2 c of sugar
1/2 c of walnuts; chopped
1/2 tsp of salt
1 c of bananas (ripe); mashed
1.75 c of all-purpose flour
2 pcs of eggs
1/3 c of shortening
1/2 tsp of baking soda
1 tsp of baking powder

Sift the baking soda, flour, salt and baking powder altogether in one a medium-sized mixing bowl. Set aside. Fluff the shortening using an electric beater on low speed.

Do this ’til the shortening is creamy and soft. Gradually add the sugar, and eggs.

Afterward, alternately add half of the sifted mixture and half of the mashed bananas ’til nothing is left using a fork. Blend thoroughly after every addition. Toss in the walnuts. Set aside.

Grease a 4-6 cup muffin mould with butter and then dust with flour. Transfer the banana mixture into the mould; and then cover with aluminum foil. Tie a cord or thread around the mould so that the foil will not be detached.

Place a rack at the bottom of the crockpot. Place the mould on top of the rack. Pour in some hot water underneath the rack (2 cups). Cover the crockpot.

Cook the mixture on high heat for 2-3 hours. Refrain from checking the bread during the first two hours of cooking.

1 big can of tomato sauce
6 pcs. skinned & boned chicken breast
1 sm. can of tomato puree
A can of mushrooms, sliced
A can of whole/sliced olives (ripe)

1 pc. onion, chop up
1/2 c. of brandy/wine (if desired)
1 tsp. oregano
Rice (cooked)
1 tbsp. of garlic
Salt for seasoning

Rinse your chicken breasts then take out excess fats from them. Get your crockpot/slow cooker then add in all the ingredients aside from your rice. Cook coered at low settings for about 6-8 hrs. To serve: plate some cooked rice then place a portion of chicken then ladle out sauce.

1 c. of brown sugar

Mix together all the ingredients inside a removable liner. Next, put in the base. Cook, covered, at low settings for 4 to 5 hrs. or if using auto settings then cooking time would be 3 hrs

2 pcs of apple (medium); peeled, cored, cut into 18 wedges
1 tsp of vanilla
7 oz of caramel candy
1/8 tsp of ground cardamom

1/3 c of creamy peanut butter
7 angel food cake slices
1 quart of ice cream (vanilla)
1/2 c of apple juice

Mix together the juice, caramel candies, cinnamon, vanilla, and cardamom in a crockpot. Gradually stir in peanut butter. Stir in the apples ’til mixed well. Cover with lid.

Set heat to low. Cook ’til caramel candies melt (approximately 5-6 hours), stirring occasionally. Use as topping for the cake.

1 can corned beef or 2 c. corned beef, cooked
3 garlic cloves (or depends on your taste)
2 (10-oz.) cans chicken stock
1 green bell pepper, diced

2 medium-sized sticks of celery, chopped
A tbsp. worcestershire sauce
5 regular-sized potatoes, chopped

Pepper & salt for seasoning

Chop up beef or you can ground them up then put them inside your crockpot together with the rest of the ingredients. Cook covered in low settings for about 8 hrs.

If you see that potatoes have already been cooked, then mash all of them up inside the crockpot then add in a bit of water as needed. This dish is best served warm together with some salad greens and hot bread.

1/2 c of saltine crackers (Ritz); crushed coarsely
1 c of Cheddar cheese; grated
1 canned “cream of celery” soup (10 oz)

2 pcs of eggs (hard-boiled); sliced thinly

Lightly grease the crockpot with butter. Toss in the asparagus, and top with eggs.

Meanwhile, in a medium-sized bowl, combine the cream of celery soup with Cheddar cheese. Mix well. Pour this over the eggs and asparagus; and top with crumbled crackers.

Dot it with butter. Place the lid to cover crockpot. Cook the mixture on low heat for 4-6 hours.

Savory Salsa-Corn Cake Recipe

2 (8-oz.) boxes of corn muffin-mix
3-4 tbsps. salsa (chunky style)
1 (15-oz.) can of corn (creamed)
2 tbsps. of margarine (softened)
2 pcs. eggs
1 (4-oz.) can of chiles (green), drained & chopped
1/2 c. of sour-cream

Inside a medium-sized bowl, mix together margarine, chiles, sour cream, eggs and corn (creamed). Using a wire whisk, make sure to blend everything together. Next, add in the muffin-mix and stir well.

Make sure to grease your 3.5 qt. Crockpot using butter/margarine then add in your batter onto your Crockpot. Put salsa atop & slice into batter. Cook covered at high settings for 2.5 hrs. Turn off the heat then partly open the lid of your pot for 15 mins.

Using a sharp knife, loosen the sides then invert the cake into a big plate/platter. If some of your corn cake top has stuck to your pot’s bottom, then just cover it with some sour cream or salsa and finish with green onions scattered as garnish.

1/4 c of port wine
1/2 c of water
1/2 tsp of orange rind; grated
1 c of cranberries (fresh)
1 c of sugar
6 pcs of cooking apples; skinned & sliced
1 c of sour cream (low-fat)

Assemble the sliced apples together with cranberries in a crockpot. Sprinkle the fruit with sugar; and then toss in the grated orange rind. Next, pour in the wine and water.

Stir the ingredients well; and then cover the crockpot. Cook it on low heat ’til apples become tender (approximately 4-6 hours).

Top with sour cream prior to serving.

Apple and Oatmeal Layers Recipe

6 pcs of apples; skinned & sliced
2/3 c of brown sugar
1/3 c of all-purpose flour
1 tsp of cinnamon
1/4 tsp of nutmeg
1/4 tsp of ginger
1/3 c of butter (or margarine); melted
2/3 c of raw oatmeal

Combine raw oatmeal, cinnamon, ginger, nutmeg, brown sugar, and all-purpose flour in one large mixing bowl. Add in butter. Mix well ’til coarse crumbs are formed.

Spread half of the apples evenly on the bottom of the crockpot. Top it with half of the flour mixture. Spread evenly. Top the flour mixture with remaining apples.

Finally, top the second apple layer with the remaining flour mixture. Cover crockpot with lid. Set heat to high. Cook for 2.5 hours

You can serve the dish either as a chicken taco or together with some sidings to make it a main dish. This recipe is very simple but also take care that you don’t cook it very long or it could turn mushy.

1.5 cups light cream, milk or half-and-half

In your cooker add in your bouillon and potatoes (sweet). Cover it then cook for about 2-3 hrs.at high settings or just until your potatoes become soft. Push potatoes & liquids through the puree blender or the food mill.

Put this back into the slow cooker together with all other ingredients. Cook, covered, for 1-2 hrs at high settings. Serve this chilled or hot together with your sour-cream. This makes 1 qt.

Salt & peper
1 c of onion; minced
1/2 tsp of cumin
1 tsp of chili powder
1 pc of green bell pepper; cut into small cubes
1/2 tsp of oregano
1/4 c of water
2 canned tomatoes w/ green chilies (Rotel); diced
3 lbs of ste beef; sliced into 1/4-inch strips
3 garlic cloves; minced
3 Tbsps of flour

Combine beef, water, ground black pepper, and salt in a crockpot. Mix well. Cover with lid. Cook on high heat for about 1.5 hours, stirring occasionally.

Toss the garlic, chopped onions, and tomatoes. Cover and continue cooking for another half hour. Reduce heat to low. Stir in chili powder, oregano, and cumin. Afterward, whisk together the flour and reserved juice flour in a small bowl ’til smooth.

Add some water if necessary for the mixture to equal 1.5 cups. Stir this into the beef mixture. Cover and continue cooking for about 2-4 hours, stirring occasionally.

May be served as tortilla filling or as rice topping.

1 bottle of red wine
1 lb of onion; minced

Combine the cubed beef with flour in a medium-sized bowl. Saute beef in the oil that was previously used for the bacon. Saute ’til meat is brown. Remove from heat. Drain. Transfer to a platter with paper towels to drain excess fat.

Saute onions, celery, garlic, and shallots for 1 minute in the oil that was previously used for the beef and bacon. May need to add a bit more oil, as necesary. Remove from heat.

Transfer vegetables to crockpot together with bacon and beef. Stir in the salt, bay leaf, and pepper. Cover with lid. Set heat to low. Cook for 8-10 hours.

Rinse your apples then slice them with the peel. Add lemon juices on your apples to prevent browning. Place your apples inside a slow-cooker with the cranberry juices (about 1 c. depending on how thick you would like your sauce.

Add some more juice (cranberry) if you like it really thick). Add in the sugar depending on your desired taste.

Allow apples to continue stewing for about 6 to 8 hrs. 1 hr. or 2 hrs. prior to serving, add in the dried cranberies. Longer stewing time means the more mushy they will get.

Your cooking time will depend on the consistency that you would like your cranapple sauce to be.

Place a medium-sized saucepan with oil over medium-high heat. Whisk in the flour. Continue doing so for 3-5 minutes. Lower to medium heat; and continue stirring ’til mixture darkens (reddish-brown). Remove from heat.

Pour the flour mixture into the crockpot. Add in the sausage, okra, onions, bell pepper, garlic cloves, ground red pepper, black pepper, and tomatoes.

Stir well to blend. Cover with lid. Cook gumbo sauce on low heat for 7-8 hours. Once the sauce is done, stir in the shrimp. Cover and cook for 15-20 minutes more.

Use as topping for steamed rice.

1/2 c of Italian bread crumbs
1 canned beer
1 canned V8 juice (spicy, 6 oz)

1 bottle catsup (large)
1 tsp of horseradish
1 tsp of Worcestershire sauce
2-3 lbs of beef; ground
2-3 pcs of eggs
Salt & pepper
1 tsp of lemon juice

In a medium-sized bowl, combine the beef, crumbs, half a cup of onions, and eggs. Mix well using fork or your hand. Mold into bite-sized balls. Set aside.

Place a medium-sized nonstick skillet with veggie oil over medium heat. When the oil is hot, roll the meatballs over ’til golden. Remove from heat and transfer to a platter with paper towel to drain excess oil. Toss meatballs into the crockpot.

Combine beer, spicy V-8 juice, lemon juice, hot sauce, salt and pepper, Worcestershire sauce, catsup and horseradish in a medium-sized saucepan. Whisk well. Bring to a boil and simmer for 10-15 minutes.

Pour the sauce into the crockpot to soak the meatballs. Cover with the lid. Cook for a minimum of 3 hours. It is better to cook it longer, though – up to 6 hours – to allow the meat to absorb the flavors of the sauce.

Stir it every now and then. To be served with rice or pasta.

1 c of walnuts; chopped coarsely
1/2 c of whole wheat flour
2 tsp of baking powder

Sift baking soda, flour, sugar, baking powder, and salt in one large mixing bowl. In another bowl, whisk the vegetable oil, eggs, milk, and orange rind.

Add the sifted mixture together with wheat flour; and then add the chopped apricots and walnuts.

Transfer not over two-thirds of the batter into an oiled tin mould. Mould must be big enough to accommodate the batter but must fit inside the crockpot.

Place a rack at the bottom of the crockpot; and then place mould on top of the rack. Cover the crockpot but leaving about a 1/4-inch opening to allow steam to escape. Turn the crockpot control on high heat. Cook for 4-6 hours.

Refrain from lifting the cover while cooking. Take it out of the crockpot once cooked, and then cool for 10-15 minutes prior to serving.

Finish with a sprinkling of the dressing. Bake in the oven for 25 to 30 mins. or just until they brown up. Sprinkle paprika as desired. The chickens can also be cooked inside your Crockpot at low settings for 4-5 hrs.

Cook, covered, at high settings for about 1 hr. and after that lower your cooking temperature to around low settings and continue cooking for another hour or just until everything melts and don’t forget to stir every so often (15 mins.).

Add in nuts and blend everything well. Lay out some wax paper then drop the chocolate mixture by the teaspoonful on it and let it harden. The chocolates can be stored in room tem.

Beans should be soaked in some water for about 24 hrs. and drain them off. In your Crockpot, mix together cloves, cumin, oregano, salt, pepper, onions, garlic, chicken stock and beans.

Mix it well with a fork. Sprinkle it on top of the fruit combination. Cover the crockpot with 4-5 pieces of paper towel held on top (across) with wooden spoons.

Put the crock pot cover on top of the wooden spoons. This set-up will let steam escape. Turn the control to high setting; and then cook the mixture ’til apples are tender (about 2 hours).

Broccoli and Ham Casserole Recipe

1 pkg of broccoli (16 oz); sliced coarsely & drained
1 jar of processed cheese sauce (8 oz)
1 canned cream of mushroom soup (condensed); not diluted
1 c of rice (instant); uncooked
1 rib of celery; diced
1 pc of onion (small); sliced
1 c of evaporated milk
3 c of fully-cooked ham; cubed

Mix the ham and broccoli in the crockpot. Set aside. In a medium-sized bowl, whisk together the undiluted cream of mushroom, processed cheese sauce, rice, onion, milk and celery ’til blended well.

Pour it over the ham and broccoli. Stir well. Cover with lid. Set the crockpot control to low. Cook ’til rice becomes tender (4-5 hours).

Crockpot Chili con Carne Recipe VI

1 canned kidney beans (16 oz); strained
2 canned tomatoes (14.5 oz)
2 lbs of chuck; ground coarsely
2 pcs of onions (medium); chopped coarsely
1 pc of green pepper; chopped coarsely
3 Tbsps of chili powder
2 garlic cloves; crushed
1 tsp of pepper
1 tsp of salt
1 tsp of cumin

Combine all the ingredients in a crockpot. Mix well. Cover with lid. Set heat to low. Cook for 8-10 hours (’til beans are tender), stirring occasionally.

May be served with tortilla (or potato) chips, garlic sauce (or ranch dressing), and melted Cheddar.

Crockpot Potato Soup Recipe

6 to 8 pcs. of potatoes, cut into chunks
2 pcs. cubed medium carrots
2 pcs. cubed celery stalks
1 pc. chopped medium-sized onion
1 tablespoon of parsley flakes
Pepper & salt for seasoning
5 cups of water

Place all ingredients inside your slow cooker and cook at low settings for about 8 hrs. or just until the veggies have cooked. 1 hr. prior to dinner, add in a 1 can of evap. Milk.

2 lbs. cheese (Velveeta)
2 lbs. cooked & drained hamburger
1 big jar of taco sauce (Old El Paso) OR
1 big jar of tomatoes (Rotel)
1 big onion, finely chopped

Combine all ingredients inside your slow cooker and wait until cheese melts. Serve dip while still fairly hot.

Caramel-Dipped Apples Recipe


Caramel-Dipped Apples Recipe

2 pkgs of bags of caramels (14oz)
1/4 c of water
8 pcs of apples (medium); cut into wedges & soaked in water

Combine the caramels with water in the crockpot. Mix well. Cover with lid. Set the crockpot control to high. Cook for about 1.5 hours. Stir every now and then. Reduce heat to low.

Pat each apple wedge dry. Using a pair of tongs (or fondue stick), pick up each wedge at the tip and carefully dip it into the hot mixture. Turn it, if necessary, to coat the entire wedge.

Take the apple out of the mixture. Hold it above the mixture and slightly shake it off to do away with the run off caramel. When done, place the caramel-dipped apples on a baking dish lined with oiled waxed paper.

Allow to cool prior to serving.

Drunken Beef Recipe


Drunken Beef Recipe

1/2 c of flour
1/4 c of butter
1 onion; diced
1 tsp of salt
1/8 tsp of pepper
1 garlic clove; chopped finely
2 c of beer
1/4 c of flour
2 to 3 lbs of boneless chuck; sliced into 1 inch cubes

Dredge the cubed beef using the 1/2 cup of flour. Place a skillet with butter over medium heat. When the butter melts, fry the beef ’til all sides are evenly golden. Remove from the heat and transfer to a platter with paper towel to drain excess grease.

Once dried, place the cooked beef in a crockpot together with beer, sliced onions, pepper, salt, and garlic. Cover the crockpot. Cook it on low heat ’til beef is tender (about 5-7 hours); and then continue cooking on high.

In a small bowl, combine water with 1/4 cup of flour. Beat (or whisk well) until smooth. Stir this into the beef mixture for half an hour.
