Broccoli Crockpot Quiche Recipe
Saltine crackers (Ritz); crushed
1 canned “cream of celery” soup; undiluted
3 Tbsps of onion; grated
2 pcs of eggs; beaten
1 c of Cheddar cheese; grated
1 stick of margarine; melted
2 packages of broccoli (2 lbs); chopped, blanched & drained
1 c of real mayonnaise
Lightly grease the crockpot with butter; and toss in the chopped broccoli. Set aside.
Meanwhile, in a medium-sized bowl, mix together the undiluted cream of celery soup together with mayonnaise, cheese, onions, and eggs ’til smooth. Pour this mixture into the crockpot with broccoli. Mix well.
Afterward, combine the crushed crackers with butter. Mix it well and sprinkle it on top of the broccoli mixture. Set crockpot control to low for 4-6 hours.
