Squash Casserole II Recipe
2 lbs. of zucchini/summer squash (yellow), sliced thin
1/2 c. of chopped onions
1 c. of carrots, pared & shredded
1 (10 1/4-oz.) can of condensed soup (cream of chicken)
1 c. of cream (sour)
1 (8-oz.) pkg. of crumbs for stuffing, seasoned
1/2 c. of melted margarine/butter
1/4 c. of flour
In a bowl, mix together soup, carrots, onions and squash. Next, get another bowl then mix together flour & cream (sour) then add this to your mixed veggies.
Toss your crumbs together with the butter then put half of it inside your Crockpot. Add in veggie mix then top it with the remainder of the crumbs for stuffing. Cook covered at low settings for about 6 to 8 hrs.
Makes 4-6 servings
Apple Spread Recipe II
4 apples; peeled, cored & cut into chunks
1 c of sugar (brown)
Juice of one lemon
1 Tbsps of cinnamon
1 c of apple cider
Toss the apples into the crockpot (3.5 quarts). Stir in brown sugar, lemon juice, and apple cider. Mix well. Cover with lid. Set heat to low.
Cook ’til apples are tender (approximately 6-8 hours). When cooked, sprinkle with cinnamon. Stir well. Continue cooking for another 8-10 hours ’til it lightly browns. Stir occasionally.
Transfer the mixture into a blender. Process ’til smooth. May be returned to slow cooker ’til preferred consistency, in case blended apple mixture is not thick enough.
Let it cool ’til just warm. Transfer to dry sterilized jar with tight lid.

Party Hamburger Dip Recipe
1 lb. of hamburger
18-12 ozs. of mushrooms (fresh), sliced
1.5 lbs. of Velveeta
1/2 of an onion, dice it up
A can of chiles & tomatoes (Ro-tel)
In a skillet, saute your onions, mushrooms and hamburger until they are browned then drain off drippings and set aside. Get your slow cooker/Crockpot then add the cheese and wait until it has completely melted before adding in all other ingredients plus the browned beef mixture.
Cook, simmering at high settings for 30 mins. Best served together with crackers or chips (corn). When you are already serving to your guests, turn the heat at low settings.
Chicken Crockpot Cacciatore Recipe IV
5 lbs of your choice chicken cuts; rinsed, drained & pat dry
1 tsp of salt
1 tsp of ground black pepper
1 tsp of garlic powder
2 canned tomato paste (small)
1/2 cup of white wine (dry)
1 canned mushrooms
1 pc of onion (small); minced
1 Tbsp of seasoning (Italian)
4 garlic cloves; sliced
1 tsp of oregano
1 canned tomatoes; cut into small cubes
1 tsp of basil
Combine salt, pepper, garlic powder and chicken in a bowl. Mix well. Transfer to crockpot. Combine all remaining ingredients in another bowl. Mix well. Pour this over the chicken. Stir lightly. Cover with lid. Set heat to low. Cook for 8-10 hours ’til chicken is tender. Serve with fried rice.

8 ozs. of canned/fresh sliced mushrooms
1/4 cup of melted margarine/butter

1 canned cream of chicken (small)
1 canned cream of celery (small)
1 canned cream of mushroom (small)
1/2 c of celery; diced
1 c of Minute rice
4 pcs of chicken breasts (large)
1 green bell pepper; sliced into 1/8-inch strips
1 red bell pepper; sliced into 1/8-inch strips
Combine all ingredients in the crockpot. Mix well. Cover with lid. Set heat to low. Cook for 6-8 hours (’til chicken is tender)

Crockpot Choco Clusters Recipe
2 lbs of almond bark (white)
1 bar of German chocolate (4 oz)
1 package of choco chips (semi-sweet, 12 oz)
24 oz of peanuts; roasted
Combine almond bark, German chocolate, semi-sweet choco chips, and roasted peanuts in the crockpot. Mix well. Cover with lid. Cook chocolate on low ’til chocolate melts (usually 2 hours).
You must not remove the cover for the first hour. Then, stir occasionally (every 15 minutes) for the remaining hour.
Spoon a small amount (about a Tablespoon) and drop individually on waxed paper. Let it cool. Once it dries, store chocolate clusters in a cool place in jar with air-tight cover.

Classic Home-made Barbecue Sauce Recipe
1 c of celery; chopped
1 onion (medium); chopped
1 Tbsp of butter; melted
1 c of catsup
1 c of water
1 Tbsp of brown sugar
1 Tbsp of lemon juice
1 tsp of salt
1 tsp of mustard
2 lbs of ground beef
2 Tbsps of vinegar
3 Tbsps of Worcestershire sauce
Place a small nonstick skillet with butter over medium heat. Once the butter melts, saute the onions and celery. When the onions are almost transparent, remove from heat, and then set aside.
Combine the vinegar, brown sugar, Worcestershire sauce, lemon juice, salt, mustard, catsup, and water. Whisk well. Pour into the crockpot together with sauteed onions.
Cover and cook for 2-2.5 hours. Let it cool and store in a sterilized air-tight jar.

Sweet and Sour Kielbasa Recipe
1 lb. kielbasa
1/2 jar (5-oz.) of mustard (golden spicy), add 1 more jar if you want it spicier
1 jar (10-oz.) of jelly (red currant)
Kielbasa should be sliced into bite size pcs. Next, add in some water (boiling) and continue boiling it for 8-10 mins. Puncture using fork so that grease is released from the kielbasa. On your Crockpot, heat your jelly at low settings until it melts. Next, add in mustard.
After the kielbasa has finished boiling, wash it out and add it to your Crockpot together with the jelly. Make sure that kielbasa meat is coated with jelly. Continue to cook simmering for an hour or so at low settings.
Scalloped Corn Recipe
3 big eggs
1/4 tsp. of salt
1 c. of half-and-half
1/4 tsp. of pepper
3-4 tbsps. of onions, minced
1/4 tsp. of pepper
2 c. of frozen corn (creamed), thaw it out
1 c. of cracker crumbs, crushed coarse
In a bowl, whisk together eggs & milk then follow with all other ingredients. Next, pour it onto a lightly greased casserole that can fit into your crockpot. Cook covered at high settings for about 2.5 hrs. or when you insert a knife at the cake’s center that it comes out quite clean.

Apple and Date Crunch Recipe
4 to 5 apples; skinned, core removed & diced
3/4 c of sugar
1/2 c of dates; chopped
1/2 c of pecans; toasted & chopped
2 Tbsps of flour
1 tsp of baking powder
1/8 tsp of salt
1/4 tsp of nutmeg
2 Tbsps of butter; softened
1 egg; beaten
Toss the diced apples, chopped dates, chopped pecans and sugar into the crockpot. Stir well.
Meanwhile, mix the baking powder, flour, nutmeg, butter, and salt altogether in one small bowl. Blend well. Combine it with the fruit and nut mixture.
Then, stir in the butter and egg. Mix well. Cover the crockpot. Cook on low for 3-4 hours.

Double Cheese Dip Recipe
1 lb of processed cheese spread; sliced into 8 pcs
1 lb of Swiss cheese; shredded
1 can or bottle of beer (12 oz)

Apple Crockpot Pie Recipe
8 pcs of tart apples; skinned & chopped
1 1/4 tsp of cinnamon; ground
1/4 tsp of ground allspice
3/4 c of milk
1/4 tsp of nutmeg

1.5 c Bisquick; divided

Grease the crockpot with butter. Mix together the sliced apples, ground cinnamon, nutmeg and ground allspice in one large mixing bowl. Transfer it to the crockpot. Set aside.
Combine 2 Tbsps of butter, white sugar, beaten eggs, half a cup of Bisquick, evaporated milk, and vanilla. Mix ’til well-blended. Pour this mixture over the apples.
Meanwhile, mix the remaining cup of Bisquick together with brown sugar. Add in the remaining butter. Mix ’til coarse crumbs are formed. Sprinkle it on top of the milk and apples.

Tuna Salad Casserole Recipe
2 regular cans of drained & flaked tuna
1.5 c. of chips (potato), crushed
A can of soup (cream of celery)
1/2 c. of mayo
1 c. celery, diced

2.5 lbs. chuck roast

2 pcs of chicken breast fillets; skinned
1 can of enchilada sauce (large)
4-6 large tortillas
1/2 cup of Cheddar cheese; grated
1/2 head of Iceberg lettuce; shredded

Buttered Barley and Mushrooms Recipe
1 c of barley
1 can roasted garlic chicken broth (about 2 cups)
4 – 6 oz mushrooms (fresh or canned); sliced
Pepper and salt
2 tsps of butter (or margarine)
3 stalks of scallions (1/2 c); sliced thinly
Combine barley, garlic chicken broth, mushrooms, pepper and butter in the crockpot. Mix well. Cover with lid. Turn the crockpot control to low. Cook for 4-4.5 hours.

Crockpot Corn Chowder Recipe II
1.5 can of chicken broth (if you want chowder that’s thicker then adjust the volume accordingly)
2 pts. of half-and-half (also can be adjustable depending on consistency that you want)
3 (16-oz.) corn (canned), drained
1/2 stick of butter
2 big potatoes, sliced into 1-inch chunks
Pepper for seasoning
1 diced big onion
1 tsp. of salt
Get your Crockpot then place all the ingredients aside from the half-and-half & butter then cook them on the crockpots’ low settings for about 7 to 8 hrs. Take them out of the pot and place inside your blender then puree the mixture.
Put the pureed mixture back inside the pot then add in butter & half-and-half then mix together well. Continue the cooking for 1 more hr. then mix everything well before serving.
Makes 6 servings.
Crockpot Cranapple Sauce Recipe
10 to 12 med. apples
2 tbsps. or 1/4 c. of sugar
1 to 2 c. juice from the cranberries
Juice of 1/4 or 1/2 of a lemon
1/4 c. – 1/2 c. of cranberries (dried)
Rinse your apples then slice them with the peel. Add lemon juices on your apples to prevent browning. Place your apples inside a slow-cooker with the cranberry juices (about 1 c. depending on how thick you would like your sauce.
Add some more juice (cranberry) if you like it really thick). Add in the sugar depending on your desired taste.
Allow apples to continue stewing for about 6 to 8 hrs. 1 hr. or 2 hrs. prior to serving, add in the dried cranberies. Longer stewing time means the more mushy they will get.
Your cooking time will depend on the consistency that you would like your cranapple sauce to be.
Sauerkraut in Applesauce Recipe
1/2 tsp of caraway seeds
2 c of applesauce (sweetened)
1 Tbsp of butter/margarine
4 c of sauerkraut; washed & strained
Combine the sauerkraut, applesauce, butter and caraway seeds in a large bowl. Mix well. Toss in the mixture in an oiled casserole dish that will fit in the crockpot.
Place a rack at the bottom of the crockpot.
Place the dish on top of the rack.
Cover and cook for 1-1.5 hours.
