Artichoke and Cheese Recipe

1 c of artichoke hearts (8.5 oz) strained & chopped
1 c of mayonnaise; (8 oz)
1 c of Parmesan; grated
1 lb of Mozzarella (shredded)
1 onion; minced

Combine the shredded Mozzarella, grated Parmesan, mayonnaise, chopped artichoke hearts and onions. Mix well.

Grease the crockpot with butter; and toss in the mixture. Cover and cook for an hour. Serve with crusty bread or crackers.

Apple Spread Recipe


Apple Spread Recipe

1 tsp of cloves; ground
5-1/3 Tbsp of lemon juice
5-1/3 Tbsp of cider vinegar
2 tsp of allspice
2 tsp of cinnamon
4 quarts of applesauce (unsweetened)
7 cup of refined sugar
1-1/3 c of brown sugar

Combine the applesauce with sugars, apple cider vinegar, lemon juice, cinnamon, allspice, and ground cloves in a crockpot. Mix well. Cover the crockpot. Cook the mixture on medium for 3 hours. Stir occasionally.

Take off the lid. Reduce the heat to low. Carry on with cooking the mixture ’til the liquid has almost evaporated. This usually takes about 5 hours (or more).

Transfer the mixture into warm, sterilized jars. Seal tightly and plunge into warm water for 10-15 minutes.

Home-Style Bread Pudding Recipe


Home-Style Bread Pudding Recipe

2 pcs. eggs, lightly beaten
1 tsp. vanilla
2&1/4 c. of milk
2 c. cubed bread (about 1 inch in size)
1/2 c. sugar (brown)
1/2 tsp. cinnamon
1/2 c. of dates (chopped) or raisins
1/4 tsp. salt

On your bowl, mix together raisins/dates, sugar, bread, salt, cinnamon, vanilla, milk and eggs. Get a 1.5-qt. souffle or baking dish and pour in the mixture to your prepared dish.

Put a metal rack inside your crockpot or use a trivet (metal) just for keeping your dish from touching the pots’ bottom.

Next, add in 1/2 c. of heated water into your pot and place the souffle or baking dish on the rack or trivet. Cook, covered, at high settings for 2 hrs. Pudding can either be served cold or warm. This recipe produces 4-6 pcs. of pudding

Crockpot Custard Recipe


Crockpot Custard Recipe

1/8 tsp of salt
1 tsp of vanilla
1/3 c of sugar
2 c of milk; scalded
Nutmeg (or grated coconut)
3 pcs of eggs; beaten lightly

Scald the milk, and then let it cool ’til warm. In a small bowl, combine the eggs, vanilla, salt and sugar; and then gradually stir in the milk. Stir well.

Grease a baking dish with butter (1 quart). Transfer the mixture into the baking dish, and then top it with nutmeg (or coconut) sprinkles. Cover it with aluminum foil.

Place a rack inside the crockpot, and then place the dish on top of the rack. Afterward, pour some hot water about an inch deep underneath the rack. Cover the crockpot.

Cook the mixture on high heat ’til custard is cooked. This usually takes about 2-2.5 hours. If you pierce a knife through the custard and the knife is clean when you pull it out, it means that the custard is done.

May be served chilled or warm.

Banana Crockpot Roll Recipe


Banana Crockpot Roll Recipe

1/3 c of shortening
1/2 tsp of salt
1/4 tsp of baking soda
1/2 c of walnuts; chopped coarsely
2/3 c of sugar
1.5 c of flour
1.5 c of bananas (overripe); well-mashed
2 pcs of eggs; well-beaten
2 tsp of baking powder

Sift the baking soda, flour, salt and baking powder altogether in one a medium-sized mixing bowl. Set aside.

Meanwhile, get a smaller bowl. Fluff the shortening using an electric beater on low speed. Do this ’til the shortening is creamy and soft. Gradually add the sugar, and eggs.

Afterward, using a fork, alternately add half of the sifted mixture and half of the mashed bananas ’til nothing left. Set aside.

Grease a tin mould (2.5 quarts) with butter and then dust with flour. Transfer the banana mixture into the mould; and then cover with aluminum foil.

Place a rack at the bottom of the crockpot. Place the mould on top of the rack. Pour in some water underneath the rack. Cover the crockpot, leaving 1/4 inch open to allow steam to come out. Cook the mixture on high heat for 4-6 hours.

When done, remove from the crockpot and let it cool under room temperature for about 15 minutes prior to serving.

Best served warm.

Apple Spread Recipe IV

Juice of 1 lemon
Lemon rind; grated
1 1/3 c of packed sugar (brown)
4 lbs of apples; core removed & sliced
3 Tbsps of ginger; grated
1 c of apple cider

Combine the apples, apple cider, sugar, lemon juice and lemon rind in the crockpot. Mix well. Cover with lid. Set heat to low.

Cook ’til apples are really tender (approximately 8-10 hours), stirring occasionally. Add the grated ginger. Stir well. Cover with lid; and continue cooking for 6-8 hours more. Stir the mixture occasionally.

Transfer the mixture into a blender (may need to do it in batches if blender is not big enough). Process ’til smooth.

May be returned to slow cooker ’til preferred consistency, in case blended apple mixture is not thick enough. Let it cool ’til just warm. Transfer to dry sterilized jar with tight lid

Apple and Oatmeal Layers Recipe


Apple and Oatmeal Layers Recipe

6 pcs of apples; skinned & sliced
2/3 c of brown sugar
1/3 c of all-purpose flour
1 tsp of cinnamon
1/4 tsp of nutmeg
1/4 tsp of ginger
1/3 c of butter (or margarine); melted
2/3 c of raw oatmeal

Combine raw oatmeal, cinnamon, ginger, nutmeg, brown sugar, and all-purpose flour in one large mixing bowl. Add in butter. Mix well ’til coarse crumbs are formed.

Spread half of the apples evenly on the bottom of the crockpot. Top it with half of the flour mixture. Spread evenly. Top the flour mixture with remaining apples.

Finally, top the second apple layer with the remaining flour mixture. Cover crockpot with lid. Set heat to high. Cook for 2.5 hours

Crockpot Corn Pudding Recipe


Crockpot Corn Pudding Recipe

8.5 oz. pkg. of corn-bread mix
1 c. of milk
8 ozs. softened cream cheese
2 tbsps. of melted margarine
2 beaten eggs
1/4 teaspoon of nutmeg
1/3 c. of sugar
A tsp. of salt
2 & 1/3 c. of sweet corn (frozen)
16 ozs. can of cream-style corn

Get your Crockpot and make sure to grease it a little bit. On a large bowl, mix together sugar, eggs & the softened cheese. Mix in all the other ingredients into the bowl and blend well.

Put all of the mixture in the Crockpot then cook it covered for 3-4 hrs. on the highest setting. This dish makes 10-12 servings
