Sweet and Sour Sausage Balls Recipe

1/2 cup of sugar (brown)
1 tablespoon soy-sauce
1 & 1/4 cup of ketchup
A can of pineapple chunks
1 tablespoon of juice from a lemon
2 pounds of sausage

The sausage should be rolled into balls then fry them up until they are browned inside your Crockpot then add in remaining ingredients. Continue cooking in your Crockpot until cooked.

Crockpot Creole Black Beans Recipe

3 pcs. of minced garlic cloves
1.5 c.chopped onions
1.5 c. chopped celery
1.5 tsps. oregano
2 tsps. thyme
1/4 tsp. cayenne powder
1.5 tsps. of white pepper
1 pc. chicken cube
1.5 c. chopped green bell pepper
Boiled hot rice
1 C. of water
1/4 tsp. black pepper
1 can (8-oz.) of tomato sauce
5 pcs. bay leaf

Get a small skillet and on medium heat, brown up your sausages then drain off the fat drippings. Take your sausages then put them inside your slow cooker and add all other ingredients also.

Cook, covered, at low settings for 8 hours or if using high settings then cooking time would be only 4 hours. Take out bay leaves before serving on top some cooked rice.

This dish makes 6-8 servings.

Indian Pudding Recipe


Indian Pudding Recipe

3 cup of milk
1/2 teaspoon of ginger
1/2 cup of cornmeal
1/4 teaspoon of allspice
1/2 teaspoon of salt
1/2 teaspoon of cinnamon
3 pcs. eggs
1/4 cup of sugar (light brown)
1/3 cup of molasses
2 tbsps. butter

Get your slow cooker/crockpot and grease it ever so slightly. Slow cooker should be preheated at high settings for about 20 mins. In the meantime, bring to boiling salt, cornmeal & milk by constantly stirring it for about 5 mins. Cover it then continue to cook, simmering for another 10 mins.

In another bowl, mix together all other ingredients then slowly beat in the hot milk & cornmeal mix until it smoothens. Next, add the mixture to your slow cooker then cook at high settings for about 2-3 hrs. or if using low settings then cooking time is 6-8 hrs.

Chicken and Vegetable Soup with Noodles Recipe


Chicken and Vegetable Soup with Noodles Recipe

1 pc of onion (large); cut into 4 parts
3 pcs of carrots; skinned & sliced to chunks
3 stalks of celery; cubed
3 pcs of breast of chicken fillet halves (skinless)
2 canned broth of chicken broth
2-3 canned soup water
1/2 tsp of dried parsley
1/2 tsp of dried dill
8 oz of noodles

Combine all ingredients in the crockpot except for noodles. Mix well. Cover with lid. Set heat to low. Cook for about 6-7 hours.

Take out the chicken. Transfer to a platter. Quickly shred the chicken using two forks. Take out vegetables and transfer to blender. Process ’til coarsely blended.

Put the egg noodles into the crockpot. After about 10 minutes, put the chicken and vegetables back into the crockpot.

Put the lid back on and continue cooking for another 10-15 minutes, stirring occasionally. Do not allow the egg noodles to become soggy.

Shrimp Creole Recipe


Shrimp Creole Recipe

1 pound of deveined & shelled shrimp
1.5 c. of celery, diced
1 & 1/4 cup of onions, chopped
1 (8-oz.) can of tomato sauce
1/4 teaspoon of pepper
3/4 cup of bell peppers, chopped
1 (28-oz.) can of tomatoes, whole-sized
1 teaspoon of salt
1 garlic clove
6 dashes of tabasco (if desired)

Mix together all the ingredients aside from the shrimps inside your Crockpot. Cook at high settings for 3 to 4 hrs. and if cooking at low settings for 6 to 8 hrs.

Next, add the shrimps in the last 1 hr. of your cook time. Best served on top of hot, cooked rice. You can substitute crawfish, rabbit ot chicken instead of the shrimps.

Also, you can replace the garlic clove either with 1/4 teaspoon of powdered garlic or a teaspoon of garlic salt.

Mediterranean Style Chicken Recipe


Mediterranean Style Chicken Recipe

1 big can of tomato sauce
6 pcs. skinned & boned chicken breast
1 sm. can of tomato puree
A can of mushrooms, sliced
A can of whole/sliced olives (ripe)
1 tbsp. of juice from a lemon
1 pc. onion, chop up
1/2 c. of brandy/wine (if desired)
1 tsp. oregano
Rice (cooked)
1 tbsp. of garlic
Salt for seasoning

Rinse your chicken breasts then take out excess fats from them. Get your crockpot/slow cooker then add in all the ingredients aside from your rice. Cook coered at low settings for about 6-8 hrs. To serve: plate some cooked rice then place a portion of chicken then ladle out sauce.

Makes 6 servings

Healthy Crockpot Chicken Creole Recipe


Healthy Crockpot Chicken Creole Recipe

3 pounds skinned chicken breasts or thighs
1 c. of diced celery
1 pc. bell pepper (red), sliced
1 pc. of bell pepper (green), sliced
1 pc. sliced onions
A can of mushrooms, sliced
A can of tomatoes
A tsp. of powdered garlic
3 pkgs. of sugar substitutes
A tsp. of seasoning (Cajun)
Half a tsp. of paprika
Pepper & salt for seasoning
Hot sauce (Louisiana-style)
2 c. of cooked minute rice

Put the chicken pcs. into the bottom part of your crockpot/slow cooker. Mix together all ingredients aside from the rice and add them all to your crockpot. Cook at high settings for 4-5 hrs. or at low settings for 7 to 8 hrs.

Rice should be cooked as per package instructions. After rice has cooked, plate it then put spoonfuls of the Creole chicken on top of the rice.

Shrimp Marinara Recipe


Shrimp Marinara Recipe

Cooked pasta (spaghetti)
1 can (16-oz.) of sliced up tomatoes
1 pound of shelled & cooked shrimps
2 tbsps. of parsley, minced
1/2 teaspoon of salt (seasoned)
1 garlic clove, minced
1 can (6-oz.) of tomato paste
1/2 teaspoon of basil (dried)
1 teaspoon of salt
1/4 teaspoon of pepper
1 teaspoon of oregano (dried)
Parmesan, grated

Inside your Crockpot, mix together salt (seasoned), tomato paste, oregano, pepper, salt, basil, garlic, parsley and tomatoes. Cook covered at low settings for about 6-7 hrs.

Afterwards, increase cooking temperature at high settings and add in the shrimps. Cook covered again at high settings for about 10-15 mins. Best served over some prepared spaghetti then finish with a topping of grated parmesan.
