Crockpot Pork and Black Beans Recipe
1/2 of ground black pepper
3 Tbsps of veggie oil
1 lb of pork (boneless); diced
2 canned black beans (16 oz); strained
1 red (or yellow) bell pepper; sliced
1 tomato (medium); skinned; seed removed & sliced
1 red onion (small); sliced thinly
1/2 tsp of cumin; ground
1 garlic clove; crushed
1 canned tomato sauce
1/2 tsp of salt
2 Tbsps of cilantro; chopped
1/2 c of sour cream
2 tsp of chili powder
Place a large nonstick skillet with butter over medium heat. When the butter melts, saute the garlic and onions for about a minute. Add the pork and yellow bell pepper; and saute ’til pork sides are brown. Drain.
Transfer pork into the crockpot together with black beans, tomatoes, onions, crushed garlic, ground cumin, ground black pepper, tomato sauce, and salt. Mix well. Cover with lid.
Set heat to low. Cook for 6-8 hours, stirring occasionally. Ladle some into a bowl. Top it with sour cream. Sprinkle with chopped cilantro.
