Provincial Chicken Recipe

1.5 lbs. of frozen chicken tenders
1 (10-oz.) can of soup (cream of chicken w/herbs)
2 sm. of diced zucchini
2-3 tbsps. sour cream (if desired)
1 (4-oz.) can of olives (black), sliced
1 tbsp. of wine vinegar (balsamic/sherry)
1 c. of cheddar, shredded
1 (15-oz.) can of diced quality tomatoes
2 tsps. flakes of parsley (dried)
1 tsp. of basil (dried)
1 tbsp. of onion (dried), minced
hot pasta, noodles or rice

Mix together chicken, zucchini, olives, wine vinegar, tomatoes, soup mix, parsley, basil and onion inside a 3.5 qt. Crockpot. Cook covered at low settings for about 6-8 hrs.

Then, add in sour-cream & cheese 15 mins. prior to the end of cooking time. The dish is best served on top of cooked pasta, noodles or rice.
