Roasted Veggie Trio Pot Recipe
3 c. (15-oz.) of potatoes (raw), sliced
3 c. of carrots, sliced
1 & 3/4 c (15-oz.) can of beef stock (Swanson)
1/2 c. of onions, chopped
Inside your crockpot, mix together onions, carrots & potatoes then pour the beef stock on the veggies. Cook covered at high settings for about 4 to 6 hrs. Blend everything well prior to serving.
