Stewed Tomato Recipe
6-8 pcs. of tomatoes (ripe)
2 tbsps. of margarine
3/4 c. of celery, chopped
1 med. onion, sliced thin
1/2 c. of green peppers, chopped
1 tsp. salt
3 tbsps. of sugar
1 pc. bay leaf
1/8 tsp. pepper
Core your tomatoes. Next, dump them in really hot (boiling) water just for 15-20 secs. then take them out and place them into a cold water bath to stop the cooking process.
Then, peel your tomatoes. Tomatoes should be sliced into wedges. Mix together all the ingredients inside your Crockpot. Cook covered at low settings for 8-9 hrs.
After dish has cooked, take out the bay leaf then finish with a sprinkling of parsley (optional). You can serve this as side dishes or you can freeze into batches to use for other recipes(soup & etc.).
Makes six servings.
