Sweet Potato And Pineapple Pudding Recipe
3 lbs. peeled & shredded potatoes (sweet)
3 beaten eggs
2 (8-oz.) cans of pineapple soaked with unsweetened juices (crushed), not drained
1/2 tsp. nutmeg
1 & 1/4 c. of packed firm sugar (brown)
1 tsp. cinnamon (ground)
6 tbsps. cubed butter/margarine
1 (12-oz.) can of evap. milk
Grease your Crockpot then add in potatoes, nutmeg, cinnamon, eggs, margarine, sugar (brown), evap. milk and pineapples. Cook covered at low settings for 7 to 8 hrs. or when cooking at high settings then cook time is only 4 hrs.
Stir after every two hours just until potatoes become softened. You can either serve it in room temp. or really hot.
Note: The dish may look like it’s curdling but when it finishes cooking, it will all blend together.
Makes around 10 to 12 servings.
